Today on The Stay At Home Chef
I'm showing you how to make
Old Fashioned Strawberry Pie
There's nothing quite like a good old fashionedstrawberry pie
And it's actually really easy to make!
To start you'll needs 6 cups of fresh slicedstrawberries
and make sure you take the green tops off
because ain't nobody eat those
Then we're going to take 1 cup of those slicedstrawberries
put them into a pot, and mash them up
It'll take just a minute to mash those allup
Then you can set that aside and take the restof the sliced strawberries
and place them all into a baked pie shelland fill it up to the top
and of course you can spread them out a littlebit
and make it all look super pretty
Then set that pie aside and you can even placeit into the fridge
while we go ahead and put together our fillingon the stove
We're going to add 1 cup of sugar to our mashedstrawberries
3 tablespoons of cornstarch which will beour thickening agent
3/4 cup of water
and then 1 teaspoon of lemon juice
And we're going to turn on the heat and bringthis to a boil
Lots of different items are used to thickenpie fillings
Sometimes you use cornstarch, other timesyou use flour
or tapioca or even gelatin
Today we're using cornstarch because
it's my favorite way to thicken pies
Once it comes to a boil let it simmer for1 minute
to thicken up
After 1 minute we're going to remove it fromthe heat
and then we're going to stir in
1 tablespoon of butter until it melts
Now you could pour this into your pie rightaway
but I like to let it cool for an hour beforepouring it over the strawberries
I feel like this keeps the strawberries alot more fresh
After the mixture has cooled start lettingit seep
through the strawberries in the pie and
let the mixture settle on the bottom
Now if you don't really care how your pielooks
you could just toss all of your strawberrieswith this
thickened filling mixture and then dump itinto the pie shell
but if you want to be able to control howit looks
and make it all pretty on top
well, then you're going to have to be patient
and just let the mixture run in between thecracks
Then we're going to let this pie chill inthe fridge
for about 4 hours
In the meantime we're going to make a little
bit of cream cheese whipped topping to decoratethe top
You'll need 3 tablespoons of softened creamcheese in a bowl
Pour 1 cup of heavy cream over that
Add in 1/2 teaspoon of vanilla extract
and 2 tablespoons of powdered sugar
And mix this together
Slowly start increasing the speed and keepon whipping this
until stiff peaks form
Then we can transfer all of this whipped topping
to a piping bag and pipe it onto our pie
I'm gonna just give some dollop-y swirls aroundthe edges
You are ready to slice and serve

Mash some of the strawberries until you have 1 cup mashed. Place the remaining strawberries into the baked pie shell. Place into the refrigerator for later use. 2️⃣ 00:00:52 - Place 1 cup mashed strawberries into a large saucepan. Stir in sugar, water, cornstarch, and lemon juice. Bring to a boil and cook 1 minute until thickened. Remove from heat and stir in butter until melted. 3️⃣ 00:01:35 - Allow mixture to cool, 1 hour. Pour cooled mixture over the strawberries. Return pie to the fridge until set, about 4 hours. 4️⃣ 00:02:15 - In a large mixing bowl, use a hand mixer to beat heavy cream with cream cheese, sugar, and vanilla extract until stiff peaks form.
